Cherry Coconut Bliss Balls (gluten/dairy-free, vegan)

Protein "bliss" balls are a great healthy option for an on-the-go snack and also serve as a great source of energy before a workout. I make my own almost once a week because instead of buying a ton of protein bars, these are a really great (and cheaper) alternative. I switch up the flavors each week so this week I tried a new flavor, cherry coconut. Just to add, these are also dairy free, gluten-free, and vegan! I hope you guys enjoy these as much as I do!!

Ingredients
1/2 cup peanut butter
8 pitted dates
1 scoop of vanilla protein powder
1/4 cup + 1 tbsp dried cranberries
1/4 cup of unsweetened coconut flakes
2 tbsp water

Recipe
Soak pitted dates in warm water for 10 minutes
While soaking add peanut butter and protein powder to a food processor
Add in dates & process until it is completely blended
Add 2 tbsp water and process again until the batter starts to stick together
Place ingredients in a bowl and mix in the dried cranberries
Roll the batter into tablespoon-sized balls
Pour 1/4 cup coconut flakes into a bowl and roll each ball in flakes until covered

Refrigerate for 20-30 minutes & enjoy
Keep them refrigerated for up to 1 week

Makes 8 bliss balls
