Vegan & Gluten-Free Truffles

 

The 4th of July is among us, and something that is usually the center of every family gathering is the food! I look forward to enjoying my day by the pool with family and friends, but in order to do so, I wanted to create some quick & easy recipes that I could whip up with ingredients I already had at home. These truffles I made only require 2 or 3 ingredients for the batter and then any toppings of your choice, making it friendly for all!

Ingredients
1 1/2 cups coconut flour or almond flour
1 cup of peanut butter or any nut butter
1 1/2 cups vegan dark chocolate chips
Granola
Coconut chips or shredded coconut
Pistachios or other nuts optional as well


Recipe
Fold the peanut butter into the flour and use your hands to mash together until you are able to roll into balls.
Add almond milk if it needs extra moisture.
Melt chocolate in 30 second intervals
Fold balls into chocolate then roll into toppings of your choice.
You can also just drizzle the chocolate and sprinkle on the toppings if you want.
