15 Minute Protein Muffins

 

Lately before work it has been really hard to make my breakfast quickly and get out the door on time. I always make sure that I eat my breakfast within an hour of waking up, and so it is essential that before I start my day I am getting in enough protein and fiber to fuel me for my long commute. I decided to gather up a group of my favorite breakfast ingredients and mix them all together to create one powerhouse muffin. You can also eat these muffins for a snack because they will give you energy without spiking your blood sugar levels.

Ingredients
1 packet of Vanilla Protein Powder (I used Garden of Life)
1/4 cup whole wheat flour
1/4 cup egg whites
1 pinch of chia seeds
1/2 tsp cinnamon
1 tsp peanut butter or any nut butter (I used PB&Co Dark Chocolate Dreams)
1 TBSP yogurt of your choice (I used Kite Hill Plain Almond Milk Yogurt)
4 packets of stevia or 1 TBSP Honey or Agave
2 TBSP dark chocolate chips (I used Lily's)

Preheat oven to 350 degrees & bake muffins for 12-15 minutes. Makes 4 muffins. After taking it them out of the oven you can also drizzle a little honey on top to add some extra sweetness.
