Heavenly Melt Away Oat Bars

 

I have been on a kick of making things that double as a breakfast and a dessert. Let me tell you- these oat bars just completely knocked it out of the park. I wanted to resemble a Quaker Chewy Bar by replicating the oats, chocolate chips, and that well-known chewy texture. I am pretty positive these are 200X better AND they are gluten-free, all natural, and just straight up taste like heaven (hence the title).

Recipe
1/2 cup Greek yogurt
1 egg
1/2 cup coconut sugar
1/4 cup maple syrup
3/4 cup brown rice flour (or other gf flour; use whole wheat flour for non-GF version)
1/2 tsp baking soda
1/2 tsp vanilla
1/2 tsp cinnamon
Pinch of salt
1.5 cups GF oats (or regular for non-GF version)
1/3 cup dried cranberries (optional)
1/3 cup chocolate chips

Preheat oven to 350°
In large bowl, beat both sugars and Greek yogurt on medium speed until smooth
Add egg and vanilla & beat
In separate bowl mix together flour, baking soda, cinnamon, and salt
Add oats, chocolate chips, and cranberries & mix
Add all of this to the large bowl with the wet ingredients and mix well
Add batter to 9X9 inch pan & spread evenly
Bake 8-10 minutes until golden brown

Let cool for 20-30 minutes- they come out mushy but will harden as they cool off.
Makes 16 bars
