Cilantro Lime Chicken with Avocado Salsa

 

I love looking for inspiration on Pinterest for dinner recipes and I actually came across this recipe a couple days ago and immediately knew I had to try it. I got the original recipe from Yummy Healthy Easy so I give all the credit to her for this amazing idea. However, I did adapt it a bit to make it my own, so if you want my twist on the recipe, keep reading!

Ingredients for Marinade
4 boneless skinless chicken breasts (I use 2 & slice them in half to make thinner)
1/3 cup lime juice
1 cup fresh cilantro chopped
1/2 cup olive oil
1 1/2 tbsp honey
1 tsp sea salt
1/2 tsp pepper
3 garlic cloves chopped
1 tsp cumin
1/2 tsp onion flakes OR powder (I used flakes)

Ingredients for Avocado Salsa
2 medium to large avocados diced
1 1/2 large tomatoes diced
2 small shallots diced
1 handful cilantro chopped
5 tbsp lime juice
1/4 tsp garlic powder
1/4 tsp salt
1/4 tsp pepper
Pinch of cayenne pepper

Recipe
In blender or food processor, combine all the marinade ingredients
When fully blended, place in storage bag with chicken and let marinade for 1 hour-overnight
Mix together all ingredients for avocado salsa in bowl & store in fridge for as long as needed
Grill chicken on medium-high heat
Top with avocado salsa & enjoy
