Chocolate Chip Coconut Cookies (gluten-free w/ dairy-free option)
Today's recipe is super simple and takes just under 20 minutes to make. Living with 3 roommates makes me think even more about dietary restrictions and allergies. As a person who tries to steer clear of gluten and dairy, I have only focused on limiting those factors in my recipes. However, since I got to school I have been playing around with desserts that also eliminate most nuts, since one of my roommates is extremely allergic to peanuts, almonds, hazelnuts, and more. As many people know, having allergies or sensitivities to food is something that can make eating a little bit more difficult, but it is very doable with the right recipes and resources.

Ingredients
1/3 cup coconut flour
2 tbsp coconut yogurt (Greek yogurt for non dairy-free option)
1/4 cup honey
1/8 tsp baking powder
1 1/4 tsp vanilla extract
1/4 tsp salt
2 eggs
1/4 cup mini chocolate chips (I use Enjoy Life)
Recipe
Preheat 350°
Whisk together coconut flour, oil, honey, vanilla, salt, and eggs
Add in chocolate chips
Line baking sheet with parchment paper
Drop tablespoon-sized portions of batter on sheet
Bake for 12-14 minutes & allow to cool for 10 minutes on pan before moving them
Add in chocolate chips
Makes 12 cookies
