Chocolate Chip Fudgey Brownies

 

With all of my typical dairy issues, it is hard to find a brownie that I can guarantee won't hurt my stomach. Today I went on the hunt to create a recipe that would tug on all the heartstrings of the vegans out there, but that also could appeal to my gluten-free gals (and of course the lucky ones who just really like brownies).

Recipe
2 tbsp chia seeds + 6 tbsp water (wisk together)
1/2 cup cocoa powder
3/4 cup any type of gluten free flour or flour blend (I used brown rice flour + flax seed meal)
1/2 cup earth balance butter
1/2 cup coconut sugar or stevia in the raw for a lower calorie option
1/4 cup of maple syrup or agave
1 tsp vanilla extract
3/4 tsp baking powder
1/4 tsp sea salt
1/4 cup almond meal
1/3 cup vegan chocolate chips

Preheat oven to 350 degrees
Combine wet ingredients together in one bowl and dry ingredients in another larger bowl
Add extra vegan chocolate chips if desired
Bake for 18-20 minutes
