Summer Rolls With Sweet Chili Sauce
As you probably have seen from my Instagram, I love eating these summer rolls for lunch, but I have only ever bought them pre-made from the store. I have been curious if I would be able to make my own version with all the things I like in it, and turns out my little experiment was successful! These rolls were so delicious I accidentally ate all three right after making them..Oops :)
3 Rolls
Pack of Rice paper wrap (any local market will have them)
1 avocado
Carrots
Edamame Beans
Tofu (I bought Nasoya Teriyaki Tofu)
1 Cucumber
Head of iceberg or romaine lettuce
Dip the rice paper in water for 10 seconds and then lay it flat on cutting board
Add all of the ingredients sliced vertically into the middle and arrange them how you want
Roll it up tight!
Sweet Chili Sauce
1/2 cup honey
2 tbsp rice vinegar
1 tsp salt
1 clove of garlic
1/2 tsp chili flakes or red pepper flakes for substitute
1/4 cup water
1 tbsp cornstarch
Add all ingredients into saucepan & stir occasionally until boiled
When it begins to boil, turn heat all the way down and allow it to sit and thicken for 10 minutes before serving
