No-Bake Protein Thumbprint Cookies

 

Lately I have noticed that I start to get cravings for something sweet around 3 o'clock. I pretty much crave cupcakes, cookies, and everything that would probably end up spiking my blood sugar levels through the roof, so I wanted to create a snack that would hold me over between lunch and dinner but that is sweet and satisfying, alas my No-Bake Thumbprint Cookies.

For this recipe you will need...
1 Cup of Oats
1/2 Cup of Peanut Butter (I used Wild Friends Cinnamon Raisin)
1 Tbsp Chia Seeds
1/3 Cup of Honey
1/2 Tsp Vanilla Extract
Pinch of Sea Salt
Pinch of Cinnamon
1 Tbsp Vanilla Protein Powder (I used Quest Vanilla Milkshake)
12 White Chocolate Chips (only for garnish on each cookie)

Combine everything in a bowl and roll into 12 balls onto the parchment paper; Refrigerate & Enjoy!
