2 Healthy & Delicious Thanksgiving Recipes

Thanksgiving is a time to celebrate with family, but finding a recipe that everyone will enjoy can be tough.

These days, everyone has some type of dietary need, whether it’s an allergy or a certain lifestyle. However, finding something everyone can enjoy doesn’t need to be stressful. Below I have come up with two amazing recipes that are completely vegan, but definitely do not lack in flavor. The first recipe contains nuts, but the second is nut-free and picky eater-friendly so there really is something for everyone. Ingredients

1 lb Brussels sprouts, halved
2 large carrots, cut into slices
4 tbsp. extra-virgin olive oil
2 tbsp. balsamic vinegar
1 tsp. chopped rosemary leaves
1 tsp. chopped thyme leaves
Kosher salt
Freshly ground black pepper
1/2 c. toasted pecans
1/2 c. dried cranberries

Recipe

Preheat oven to 400°. Toss vegetables on large baking sheet with oil, balsamic vinegar, rosemary, and thyme. Season with salt and pepper to taste.
Bake for 20 to 25 minutes, until the vegetables are tender, shaking the pan halfway through.
On stove, toast pecans in olive oil until golden brown
Take vegetables out of oven, toss in pecans and cranberries, and serve.

Ingredients

1.5 lb gold creamer potatoes halved
Sea salt
5 tbsp olive oil
3 garlic cloves minced
1 sprigs fresh rosemary
4 tbsp vegan butter
Salt & pepper
Parsley for serving

Recipe

In a large pot, cover potatoes with water and add in salt. Bring to a boil and cook until totally soft, 15 to 18 minutes. Drain and return to pot. Use a potato masher to mash potatoes until completely smooth.
Meanwhile, in a small saucepan over medium heat, heat oil and rosemary then add garlic and cook for 1-2 minutes. Take out rosemary, leaving oil and garlic, then pour oil over potatoes. Add butter and stir until completely combined and creamy. Season with salt and pepper to taste.
Transfer potatoes to a serving bowl and season with more pepper and garnish with rosemary and parsley.
